First, We need to know what safety your machine is tripping out on.. On this machine it can only be 2 and can be determined by turning the machine off and watching the harvest light when you turn it back on,. One would be long freeze time of 60 minuets. The other is a long harvest time of more than 3 min.
The most common problem with all ice machines is the lack of cleaning. They do require a special chemical to clean and re-sanitize to prevent machine damage. Being your machine comes and goes, I believe you just need to clean it. You will need 10 oz of Manitowoc ice machine cleaner.
Turn machine off.
Empty the ice bin,
Add 2 oz cleaner to sump.
turn switch to wash.
After the 22 min wash the machine drain and stop. Secure the machines power and water. Now you have to remove the pump, spray bar, thickness probe, Fill valve, and sump. Mix 1 gallon of water and 8 oz of cleaner to clean all you removed. There will be mineral deposits you are removing. Caution, the cleaner is a form of food grade acid and may cause irritation so use gloves and glasses. Rinse everything and sanitize. Reinstall
Clean the evaporator!
