    Has a 10g red wire and black white green 12g wires

    Being a Hobart product,  we don’t have access to the wiring diagrams.  only Hobart techs have that.  However, you have one attached to the machine. That’s where you start. They should have a connection box with a terminal block that is marked with L1, L2, L3, N, and G.  Because it has the slash 110, Neutral will most likely be required.  With 240 you only have 2 power legs. So referral to the wiring diagram will be required.

     

    Next look at the control system. Does it have a multi tap control transformer to change the voltage from 208 to 240. Especially important if the machine has solid state controls.to prevent over-voltage damage.  Also look for a mother board with voltage taps that have to be re-positioned.  Now comes the main load contactor and heaters. If the unit was on 3 phase 208, it may have a 3 pole contactor for the resistive load. If so, one has to go to the Traulsen wiring diagram for the re-wire. All this assuming that you gave the power rating plate as above.

     

    Second problem I have is that I can’t find that model number.  You say warmer, do you mean a food holding cabinet or re-thermalizer?  Or something like a proofing box.
