Looking for a tutorial video of how to program A C-Vap Cook and hold model CA8522.
Having trouble programming the C-Vap Cook & Hold model CA8522. Does it have to have water in it or can we just use it as a warmer without water? We’re having trouble changing the temperature. What’s the trick to that?

Answer to your first question is obvious. As per the manual;
So yes, it has to have water.

I should add that this unit is sold as a low power rethermalizer.. your manual is I believe like this

Where as the CAC522 is the full cooking model instead of a rethermolizer. Your control may have limitations due to that. The CAC’s have more heaters for browning as well as hidden keys for programming The installer should have walked you through this.
