Before you start make sure the machine is clean and has a 1/8 bridge, Evaporator is making a full and even sheet of ice.

 

Make sure to read the manual page 135 on, and print out the sheets to make measurements recordings.  You will need a scale and measure the drops for weight and time.  Also you have to derate the chart 7% for a dice machine over a 1/2 dice.  Read the section in the manual just prior to the charts. page 225.
