    Being a combi oven, they are very touchy.  You will need to contact your local Hobart service center with not only a model number, but the units ML number. and some of the parts are specific to you elevation.

     

    The good news is that the model you provided is not a combi oven, but a straight convention oven. So conversion should not be to bad.  But you still need a tech to calibrate it. Being a 25 year old design, one wants to inspect all the internal burner parts and motors.

     

    It appears that you only need 2 parts for that conversion. A gas valve and a orifice.
