How do I put the metal part of the knob back on a star griddle gas valve
One of the cooks pulled the metal piece off the gas valve somehow, now there is no adjustment. Knob won’t turn at all and the metal insert comes off with the plastic knob.??? How do I reassemble this? Its an older star manufacturing griddle about 48 inches.

Ouch. Your not repairing that one. You’ll need to contact a service company and replace the valve and knob. Hope it isn’t leaking. Because you can’t turn it means the shaft got bent.
