    Have a couple Hobart slicers that are cutting product unevenly. slices are thicker on one end.

    everything is tight and to the naked eye everything looks level.

    Resharpen the blade.  Also if one pushes to hard and not let it cut the product it will do this with any slicer.  Sometimes the blade diameter gets to small and the gap between the blade and thickness guide gets to big as well.

    It could be a stabilizer bushing that keeps the blade shaft steady, if this is gone the shaft will act like the shaft is bent which will cause uneven cutting.

    The Hobart slicer gauge plate has a gear in it to lower and raise the thickness; this gear will wear over time allowing for slippage as you apply pressure with the slicing motion.

     

    You can replace the gear OR start closing to your thickness; meaning open the gauge plate past the point of your desired slice and then close it to where you want it to be. This will usually apply tension to the gear and will prevent it from slipping.

    Sometimes this can be caused by the blade simply needs sharpening

    this is true, but I am going to assume that the operator knows how to use the machine

    and if it  is automatic like arbys  and several others where does operator error come in to play?

    The auto feed machines are worst.  The users can’t feel the slide and blade resistance and tend not to sharpen as often as needed.  If you push the slide back and forth to get how it feel’s, then add a product and make a cut,  You know right away how sharp the blade is.   When sharp they just glide right threw the meat with very little resistance.  But if dull or if they have a burr from improper sharpening,  they drag and require a lot more force.  They will also tear the meat and squeeze out a lot of grease.
