Since you didn’t provide us with a model number, I can’t give more detailed info, but if you’re curious how your ice machine knows the bin is full, here’s some info on a Manitowoc S Model’s sequence of operation:

This is one reason (among many others) that a restaurant may choose to transport ice to another bin for later use. No sense having an ice machine sitting idle when the rush is incoming.

They have different ways of sensing full bin depending on the model.  Most smaller Manitowoc’s use the closed curtain over the ice for sensing,  If let open for a certain time it will shut down till it closes.  However multi evaporators usually have a bin sensor that shuts it down before the ice can get to the bottom of the head..

Bin plays a very vital role in the ice maker, which actually determine how much amount of ice your bin can hold. It becomes very necessary to always make sure that your ice machine bin does not overfill. It actually creates several problems and you may not able to produce ice. The ice machine is largely used in commercial places like in hotel and restaurant in order to serve cold water to the customers. But at the same time, it is very important to provide proper maintenance service to it in order to release fresh and good tasting ice from it. One can pop over here to hire experts if you are still facing any kinds of issues related to your ice machine.

With todays Indigo’s one can do a multitude of things like making it only run during usage times or even adding a bin sensor that will only make a partial bin full.  They are made to run to the head before shutting off. It can’t overfill due to the door switch not closing.  Even on other brands like Scotsman or Ice-O-Matic.   The only one I have ever seen with a problem is a Hoshazaki that the bin switch failed.  Even the nugget and flakers have a fill  switch on them.  With themif you get water carry over they tend to make solid blocks if left to long in the bin.
