    It probably just needs lubrication.

     Berkel 01-404675-00183 FOOD MACHINE OIL 16OZ. | Parts Town 

     

    You really need to get Berkel’s recommended oil here. Other oils, like vegetable oil and other ones used in cooking, will go rancid and bind things up worse, and standard lubricants aren’t food safe.

    Never, NEVER…EVER use vegetable oil or pan release spray.

     

    FWIW: WE use food-grade mineral oil on all our slicer slide rods.

    You may have to clean the gum/residue off the slides with a solvent like alcohol before lubricating.
