Shawn, what is it you need that is special for this. Pro series Frymaster, 120V, IR plates right?. Try this on for size.
No guarantee, but it’s a FM 2 vat. Is there anything special other than that?

Haven’t actually been on site yet but the call is thermostats are out of calibration.

PartsTown’s manuals are a little outdated. Here’s an updated version of what fixbear posted, straight from Frymaster’s website:
Performance (Pro) Series Service and Parts Manual – Gas Fryers Models MJ35, MJ40, MJ45 & MJ50
Per Frymaster’s service manual cross-reference, the letters “FW” in the serial number crosses to manual number 8196092.

Are you saying it that fryer has a Computer Magic III.5 temp control panel?
Those can’t be calibrated. If it’s off by a substantial amount, then it has either a bad probe, faulty probe wire connections…or a bad computer. Also, before troubleshooting further, make sure the temp probe guard (in the vat and under the oil level) is clear and free of any food debris. A bunch of soggy crumbs stuck in the probe guard will prevent it from sensing properly and the fryer will overheat.
Here’s a webinar on the topic. I realize your fryer is different, uses a different interface board and connections, but the temp control is the same.

The webinar is long, but info from it will help you understand their circuit design, how it works and some troubleshooting tips.
I’ll point out that their service manuals sorely lack detailed stuff like what’s in the webinar. That’s because Frymaster wrote it for factory-trained techs who have a technical reference manual (provided for their seminars).

Keep that for future reference since Frymasters get WAY more complicated than your fryer.
Also, I noticed that they have removed the chapter covering Master Jet fryers. Here’s a copy of that chapter from their 2004 tech reference manual:
