Being the piolet stays lit, you can eliminate the high limit safety system. But it concerns me that you say flames are coming out below the burners. You never gave us the model number, so I don’t have any idea as to what type of burner system you have, nor the control system. But what you describe sounds like corroded terminals on the gas valve. But don’t overlook the temp controller. If your thermopile has the copper tube and internal wire, it’s common for the adapter on the gas valve to have heat related loss of conductivity. Usually caused by someone over tightening it at some point, but also a build-up of grease and moisture. After all, it’s has to operate on less than 1 volt. The hold in voltage is about 450 millivolts.

As for the flame coming out the fount, that adds a lot of moisture and heat in the control area. Make sure to check the chimney to be clear. And if it has ceramic tiles alongside the tubes, you may have one broken or out of place. That should have been caught during cleaning. But unless the shop specializes in your fryer, they may have missed it.
