    Hobart LXIH wash temp

    What is the allowable wash tank temp on LXIH? Our health inspector wants 165. I told her 150!

    You’re not going to win that one. Each municipality has there own codes that if you are in there jurisdiction you have to meet. Unfortunately the local codes can supersede national. If she wants 165F, then set it there or slightly above. Rinse is normally 180 and makes it easy to keep wash temp there.
