i have a henny penny evolution elite open fryer and its not pumping oil back in the pan,the motor is running.what could be the fault

Could be a clogged pump line, I’ve seen that on a Frymaster before.
Either that or a broken O-ring or a seal that’s letting air in.

You never said what model you have, or how much service it has on it. Do you have any error codes?
They use a roller pump on these. And they do get pluged up so the rollers don’t come out from gunk. But most often is the “O” rings not being in good shape or greased at reassembly of the filter pads.

It depends on where you are working. If it is a chili’s, then in no longer has the roller style pump. Some times they also need to be primed by putting some oil down the incoming side of the pump. Another possibility is the return valve not opening. Is it happening on every vat or just one.
