    The subject machine is a Follett VU300M24DL. It is indoor airconditioned space between a dining area and open service window. The ice in the lower service bin is wet and clumps together taking the machine out of service frequently. Is there a way to control humidity and “dry” the ice waiting to be dispensed?

    The problem you describe is found with High ambient temps around the machine like it’s in a air stream from a ventilation duct or a lack of use of the ice as the machine may be to big for the location. Also check that the bin insulation has not been damaged or that the bin door is being left open excessively. What’s happening is not humidity, but heat getting to the ice before use. There will always be near 100% humidity inside a ice machine.

    That makes sense. I’ll check the airflow, insulation, and door. A lack of use is not the problem as it is in a very busy fast food restaurant.

    That means they are probably leaving the door open and you’ll find a vent nearby that blows into the bin.
