    Hi, I want to buy a Middleby Marshall oven from a closed-down bakery. I need help finding out what kind, as I will be opening a bakery in a few months and need the information to add to my plan review. I believe the owner said its a 18 pan but I could have misheard. It is gas. I have looked for the information around it but can’t find it. Any help I will greatly appreciate it!

    Also would you recommend buying it? The owner closed a few years ago after her husband passed away. She decided to disconnect from the gas line as she could no longer continue the business.She said it worked for the years they had it up and running with no problem and only needed regular maintenance.

    You haven’t given us enough information to even guess what that oven is. Somewhere on the frame there will be a tag with the model number, serial number, size, BTU’s, and date of manufacture of the oven. I suspect it is a conveyor oven, as that is what Middleby is known for. If so get out your tape measure and measure the width and length of the chain bed. If a deck oven, or rotary that all changes.

    With everything piled around it, it’s difficult to tell what you have. Pictures of the oven in a quartering view and the control panel would also help. The area that should be evaluated in the burner, combustion area. Also the chain wear and drive. If you can power it, listen to the blower motor bearings. They get pricey.

    That’s a old rotary oven made for Middlby by Sindbad and Cutler. Both have gone out of Business. Parts are near unavailable. But the best thing is to contact a service company in the area that can evaluate it for you to see if it’s serviceable. A good choice would be the one that performed work on it previously. The rotary rack bearings are a problem replacing. Depends on their condition and the burner/combustion area. Also moving it and recommissioning will be costly.

    I of course have no idea what you need or intend to use it for. But my impression is that you might want to explore more options. Don’t be afraid to contact food equipment dealers. even if you don’t buy from them, they will ask you questions that will help you to be more informed as to what will work for your plans.
