The only important thing to know is how the gas safety system works and ignition proofing. The thermostat is no more than a on/off switch. It’s what is in the design down below that is important.
Now, installing a oven thermostat is very demanding to the tech. The bourdon tube can not be crimped, scaped, or bent at tight angles as you thread it down into the oven cavity. It also has to be protected from vibration wear along it’s final route. The bulb also has to be properly mounted to provide quick even sensing and be protected from oven pans/tools from hitting it.
