Interesting that you still have a QD in-service. Start by doing a proper cleaning and inspection of the machine. Be certain to use Manitowoc cleaner as others may etch your evaporator and cause harvest problems. The ice thickness plate that is at the top of the evaporator determines when to start harvest. The ice door cover has a magnet that when the door swings out opens a switch that terminates harvest. So the machine has to be level to function properly. When harvest is initiated, the hot gas solenoid opens and heats the evaporator. If the location is to cold, or undercharged the gas will also be below normal temperature and delay harvest. Mineral’s on the evaporator will make ice hang on. The divider plated sometimes get lifted from ice expansions off the back plate and cause hangs. Make sure that you dry the evaporator after cleaning and inspect it with a bright light for this. If you still have problems, make sure to check the times of freeze, harvest and that the bridge height is thick enough for a full sheet to fall and not pieces here and there. That will fool the harvest to think the plate is empty. Also confirm that the ice sheet is forming even. Sometimes the top of the sheet will be thin from incorrect metering or charge. Or hot gas valve leak.

It took me a bit of digging, but I finally found the service manual for the Q sieries undercounter. You can find it here: Q_UnderCounter_uc.book

This will help you to understand how the timing cycles work and what happens why.
