have a very old 8 burner gas stove w/dual oven. where can I locate the model number?

That depends on the Manufacturer. Most of the time model numbers can be found behind the kick plate. The kick plate is the panel below the oven door. Sometimes you will see the data tag behind the unit close to where the gas gets piped in.
