  • Uneven cooking on bakery oven

    Cooking unevenly. Besides the power vent solenoid being open and a voltage drop at the board for said solenoid, I can’t find any reason it would be “uneven cooking”

    Suggestions?

    And what exactly is the power vent used for, there is a button to open and close the vent at the users will.

    I’d resolve that power vent issues first. That might be the source of uneven heating.

    According to the attached OPERATOR’S MANUAL (which Hobart does NOT have in their RESOURCE CENTER), the vent is intended to control humidity (pg 6).

    I’m not overly familiar with their ovens. I do remember our company once did warranty work for them, then Hobart (ITW) took them over. Same for the now defunct Baker’s Aid line of bakery equipment.

    I remember that those old Baker’s Aid ovens, as well as our Dahlen ovens where I work NOW, the louvers inside the cooking chamber must be adjusted periodically due to the change in seasons (temperature) affecting the evenness of cooking the product from the top of the rack and down to the bottom.

    I’ve never made those adjustments myself, but those oven manufacturers provide something like “feeler gauges” to set the louver’s spacing from top to bottom. I’m sure a service manual (which I can’t find) would cover that…IF that even applies to Baxter’s design.

    My having said all of that, I DON”T recommend messing with those louvers until you gain more guidance. If it were ME there, I’d just be sure they’re all tight and the openings are clean.

    AGAIN, that malfunctioning power vent might be the source of the issue in the first place.

    My first question is does the rack get picked up and is it rotating. I agree with Ectofix on the vent.I have a customer with both a single and a double rack. But they are electric. And a pain in the A– to move. If you have uneven cooking it has to be top to bottom as the racks rotate. Check the door sweep to be in good shape as there will be air sucking in with the vent open at the bottom. There by cooling the bottom. They are solid state controls and monitoring, so I doubt a fan problem from speed. But a foreign object in the fans obstructing flow may be a problem.

      Good point about the door sweep. I forgot about those. I don’t address cooking issues much. Mostly “IT DON’T WORK!”

      I think most manufacturers have gone to LIFTING nowadays. That bottom carousel bearing on the NON-lifting ones was always a reason for service calls.

      You wouldn’t believe what our Dahlen ovens use for the”bearing” for the lift system. A friggin’ Teflon ring. That’s ALL! A BIG Teflon washer.

    I also forgot to mention about the exhaust system. Baxter’s are hard plumbed to external vent fans out side the building. This means one has to check the aire pressure conditions in the kitchen to make sure that make-up air is adequate and the fan is to design and running.

    Yeah, they are right. We have a few of those ovens and generally when we get the uneven cooking call it’s because they hit the Louvers with a cart and messes up the air flow. Hobart has a tool to set them backproperly. One other issue we get on them is user error. On the bigger ones they have to use 2 carts for it to cook properly. Even if they need to split one carts worth between 2, and also have to place sheet pans face down in the empty slots so the air circulates properly.

      I forgot all about filling the empty slots so that the air flow is even. Thank You.
