Recently acquired a 1996 model year Vulcan SG4. It has an intermittent temp control problem. Sometimes it gets to the temp it’s set to, sometimes it doesn’t. If it does get to the appropriate temp, it may hold there or it may not. Today for example, I set it for 400. IT got to 400 pretty quick, but then it stopped heating and promptly fell to 200. This may or may not have happened when I opened the oven door to check the temp. Ideas?

Your going to have to do some troubleshooting with a DVOM for this one. It can be the Temp controller, the fan interlock, or the gas ignition system. Check for heat call at the ignition module and then work backwards.

If the ignition gets voltage from the temp control, but fails to light or lights and goes out. Check for ground to the burner. Common variation with heat saturation. Same for the fan proving switch in the motor.

If you don’t get a call from the temp control, Ohm out the sensor and check the wiring connections.
