difficult to answer without knowing specific model number, some of my clients run their vertical contact toasters with silicone belts and some do not, the ones that dont leave horizontal chain impressions on outside of bun, thus the reason for the silicone belts, some have teflon glide sheets which cover the heating platen, some dont, some use butter, some dont, the ones with teflon glide sheet do not tyoically use melted butter. All of them have some sort of thickness setting to accomodate differences between buns, and to accomodate top from bottom bun. An example would be the Antunes/Round-Up VCT line, which can be run without silicone belts but with a teflon glide sheet over platen, the inside edge of bun makes contact with the teflon glide sheet, which must be installed “dark side” facing bun surface, “silver side” facing platen or heater, if you dont like chain impressions on buns you can add the silicone belts but you must change the belt tensioner to the “roller” style so you dont tear or rip the silicone belts. Very simple to do, but you will have to change the tensioners. Hope this helps.
