How to Replace a Pitco Fryer Hi Limit

If you’ve already gone through all of the diagnostics work with your multimeter and have deemed the hi limit to be faulty, it’s time to order a replacement. So with tools and components in hand, you’re ready to get to work but find yourself unable to remember how to make the switch. With the help of this video guide, we’ll walk you through how to replace a Pitco fryer hi limit. So from removal to installation, you’ll be able to ensure the job gets done right.
Removing the Hi Limit
- Step 1. Unmount the hi limit – Loosen the screws to unmount the hi limit from the bracket. Disconnect wires connected to the hi limit as well.Â
- Step 2. Remove the bulbs – Unmount the capillary bulbs for the hi limit and thermostat that are located in the fryer tank. Once they’re unmounted, straighten out the hi limit cap tube. You can tell it apart from the thermostat cap tube since it’s smaller in diameter and is closer to the outside wall of the tank. Be sure it’s sitting in front before going down to remove it.
- Step 3. Route the hi limit – Carefully route the hi limit around other components so it hangs below the cap tube opening. Be sure to not bend the thermostat capillary.Â
- Step 4. Loosen the nut – Loosen the nut for the hi limit capillary tube. You can then pull the capillary and bulb down and out to complete removing the old hi limit.Â
Installing the Hi Limit
- Step 1. Prep the new hi limit – Verify the larger nut and smaller nut on the capillary are separated from each other. Then apply thread sealant to the larger nut.Â
- Step 2. Slide the bulb up the tube – Carefully slide the nut up the tube to the fryer tank and loosely hand tighten only the large nut.Â
- Step 3. Mount the bulb – Line up the thermostat and hi limit bulbs before securing them with the bracket. Be sure the thermostat bulb is mounted toward the inside of the fryer tank. Be sure the cap tubes aren’t touching the burner tubes when mounting.Â
- Step 4. Tighten the nuts – Start by finishing tightening the larger nut. Then slide the smaller one up and secure it in place. Be sure to start it by hand before using tools to go a quarter turn.
- Note: If oil drips after the replacement process, the nut can be turned another quarter inch.
- Step 5. Mount the hi limit – Reroute the hi limit so it’s out of the way of the drain valve and moving parts. You can then reconnect the wires to the hi limit. It’s vital to get the connections tight on millivolt units. The hi limit can then be mounted to the bracket on the unit.
