What Does a Thermocouple Do in a Commercial Pizza Oven?
A thermocouple is a flame-sensing safety device located within the pilot assembly of many commercial gas pizza ovens. When heated by the pilot flame, the thermocouple generates a small electrical signal measured in millivolts. This signal keeps the gas safety valve energized and allows gas to continue flowing to the pilot and burner system.
If the pilot flame goes out, the thermocouple cools and stops producing sufficient voltage. The safety valve then closes, shutting off the gas supply and helping prevent unburned gas from accumulating inside the oven.
Because of its role in the flame safety circuit, a properly functioning thermocouple is essential for safe oven operation.
Symptoms of a Failed Pizza Oven Thermocouple

- Step 2. Access pilot assembly – Remove any access panels required to reach the pilot assembly and flame safety components. Consult the manufacturer's service documentation for exact locations.
- Step 3. Locate and inspect existing thermocouple – Follow the thermocouple from the pilot assembly to the gas safety valve.
- Step 4. Disconnect old thermocouple – Carefully loosen the thermocouple connection at the gas safety valve. Remove any retaining clips or mounting hardware to free the thermocouple from the pilot assembly.Â
