Pitco Rack Fryer with Automatic Drain Valve Replacement

Before getting started on a Pitco rack fryer with automatic drain valve replacement procedure, you want to make sure you have the correct tools and knowledge to get the job done safely. Learn more with our helpful guide.
Critical Safety Notes
- Hot oil hazard – Oil must be cooled below 120°F before service
- Lockout/tagout required – Electrical + gas (if applicable)
- Use oil-rated gloves and face protection
- Never remove the valve with oil in the vat
Tools & Materials
- Adjustable wrench / pipe wrench
- Socket set
- Screwdrivers
- Oil-rated drain pan or caddy
- Multimeter
- OEM Pitco automatic drain valve
- High-temp thread sealant
Automatic Drain Valve Replacement Procedure
Step 1: Shut Down the Fryer
- Turn fryer OFF at the control panel.
- Shut off gas supply.
- Disconnect electrical power at the breaker.
- Apply LOTO procedures.
Step 2: Drain and Cool the Oil
- Ensure oil temperature is ≤ 120°F.
- Use the system drain function.
- Drain the oil into an approved container.
- Leave the drain open to ensure the line is fully empty.
Note: If the automatic valve is stuck closed, you may need to manually override or disconnect downstream piping carefully.
Step 3: Access the Drain Valve Assembly
- Remove the lower service panels.
- Locate the automatic drain valve:
- Typically it’s mounted inline at the bottom drain port from the fry vat
- Inspect for carbonized oil buildup, leaks and a damaged wiring harness.
Step 4: Disconnect Electrical Connections
- Identify the valve actuator wiring.
- Label the wires (or take a photo).
- Disconnect the plug connector or terminal leads.
Step 5: Remove the Existing Drain Valve
- Place absorbent pads under the valve.
- Loosen the outlet piping first (downstream side).
- Loosen the inlet connection from the frypot drain.
- Remove the mounting hardware (if it’s bracketed).
- Carefully remove the valve assembly.
Step 6: Inspect Related Components
Before installing a new valve, check for the following:
- Drain line obstructions
- Thread condition on frypot outlet
- Signs of oil carbon buildup in piping
Step 7: Prepare the Replacement Valve
- Confirm the following:
- Correct Pitco OEM part number
- Matching voltage
- Proper flow direction (see the arrow on the valve body)
- Apply high-temp thread sealant to threads.
- Ensure actuator orientation matches original install.
Step 8: Install the New Valve
- Attach the valve to the frypot drain outlet by hand tightening and then using a wrench.
- Reconnect downstream piping.
- Secure mounting bracket (if applicable).
- Reconnect the electrical:
- Match original wiring
- Ensure tight, clean connections
Step 9: Pre-Test Inspection
Before restoring the oil, verify that:
- All fittings are tight
- The valve is properly aligned
- No wiring pinched or exposed
- The drain path is clear
Step 10: Restore Power & Function Test (Dry Test if Possible)
- Restore power to the unit.
- Activate a drain cycle via controls.
- Observe the valve actuation and that there’s no binding or delayed response.
Step 11: Refill Oil & Perform Live Test
- Refill the fryer with oil.
- Heat the unit to operating temp.
- Run a controlled drain cycle.
- Check for smooth valve opening/closing, proper oil flow into the drain/filtration system and that there are no leaks under hot oil conditions.
Step 12: Final Checks
- Inspect all joints for leaks after heating.
- Confirm fryer returns to normal operation.
- Reinstall all panels securely.
