    The high limit is supposed to trip if the oil reaches 425 degrees. How hot is the oil when it rips? You may have a bad high limit.

    The burners should come on when you turn the valve from Pilot to the on position if the thermostat is calling for heat. I’m not sure what your concern is by that comment?

    Fryers only shut down the pilot in they are over temp or have a bad thermopile. What you have described is a high temp oil situation and determined by the limit tripping. Test the oil temp Normal working temp is 365 to a max of 375. above that the oil breaks down and oxidizes within a very short time.. If the oil temp goes higher than that you need to check the calibration of the thermostat. If it trips at below 400 you need to replace the high limit. They go on a common basis.These temps are approximate, as different models and makes use different limits.
