After much research, This it what I found.  Eurodib is a corp that markets many lines like Atro Shamm and Sirman.  Sirman is the line of food prep like veg slicers etc.  The TM is both a veg slicer and cheese.  Like this sirman-vegetable-and-cheese-cutter-tm#   The only manuals and parts list is for the current model that I could find.  Not certain if it petains to your machine, but take a look here:  http://www.fem.co.uk/downloads.aspx?file=Resources/TM1pdf_26_11_2012_09_33_07.pdf
