    Hello all! I am working on a Hobart CN91 convection oven that is acting wonky. It will get to around 380° if the thermostat is set to 500°. It has 3 elements in the back and only one comes on. Should all 3 come on? They all look fine. I tested them and they all ohm out the same(I didn’t disconnect them, should I have?) I am new to this and helping a friend with his restraunt. We live in BFE and technicians are over 2 hours away.

    They should all turn on at the same time. I would check for voltage at the element terminals to identify which are working. Trace the wire back to a contactor or thermostat and see if you are losing voltage there. Is there a wire diagram on the unit? A picture of that would help.

    Depends on how the elements are wired, their number, and their voltage. To be certain, disconnect them and ohm. Or you, depending on your skills, operating voltage, and confidence, you can energize and amp the feeds as well as test the output side of the contactor/SCR’s for voltage. There is safety problems with live equipment, so not recommended.

    IS this machine installed on single or three phase power? It is convertible for both. What voltage is it? You can find a wiring diagram for it here if there is not one you can read in the machine. Page 17 for the info you have provided.:HOB-CN901_iom.pdf (static-pt.com)

    We have an electrician coming tomorrow. It is installed on single phase 208V. The nameplate says 240V/3 or 1 phase. 11KW. Looking at these diagrams, none seem right. Everything for CN91 looks to be 17.6KW. I just stopped by and the oven was at 500°. Really weird.
