how temperature is maintained in impinger pizza oven ?
as theres no variable gas valve in the oven,, so then how the lower temperatures are maintained ? as the oven works pneumatically so it can lose heat very quickly, suppose if burner is set to off for a while,, then how the air circulating blower keeps working ? -

The burner cycles off and on with the load. There is not as much loss as one would think if the end gaps are properly adjusted to your product. And the fingers are installed as per the original design order. The hot air doesn’t leave the oven, just circulates internally.
