It all depends on the unit you have. Here is a general idea of what a proper ice machine cleaning would look like.

Each manufacturer has their own requirements. That mean check the manual that came with the machine. Basically, you’re going to mix a approved cleaning solution, circulate it, then disassemble certain items to scrub and clean. One always has to be diligent with the sensors and spray bar. There are a few machines I’ve found that after cleaning, you need to clean the ice thickness again with alcohol wipes, so it doesn’t give false readings.
Do not assume that aftermarket cleaners are OK. Long term they may etch the evaporator and cause harvest problems. Use the manufacturer’s solution! You can determine the condition by drying the evaporator and looking at the pocket area with a light for a dull or rough appearance. If there, rub it with the back of a wooden skewer (square edge, not point to see if it comes off or if it is micro-pitting. If it rubs off, then you need to clean again. That’s mineral deposits.
