    So I picked up a Vulcan VEC-10 electric steam kettle and the tag says 3phase. Online it says single or 3 phase which I’m assuming it can be both? And the wiring diagram I believe says it can be both. Right now the plug has 4 prongs and a thick cord. Can it be converted to single phase?

    I would contact Vulcan directly with a model and ML number to get the conversion instructions. Looking at the wiring diagram, it seems like it can be converted. 3phase units appear to have three elements with parallel connections.

    Single phase using two elements in series and one parallel. I cant research much further without more information.

    There is more to it than just single or 3 phase. In North America 3 phase is normally 208V or 480V where single phase is 230V. That means different elements. If you put 230 to a 208 element it will burn up.

    Plus you may have to up the current carrying of the wiring and contactors to get the 12 kw capacity.
