Follow the water supply pipe. It should be at the end of that line. The water will go through the floater valve until the floater closes. If it has a float, its the bottom right corner of the evaporator.

I believe the MIN100 doesn’t have a float valve, but a solenoid. Can be found in the bottom inside the bulkhead where the water line connects to the Ice Machine. Water then flows to the top of the evaporator and drains to the sump for the pump. Halfway up the sump there is a overflow to drain. There is also a plug on the bottom of the sump to drain the cleaning solution.
Be aware that the machine adds water in excess to purge minerals. And in the clean mode may flow water continuously for part of the cycle.
This is a very minimalist design, so the water flow is controlled by the computer board with time. No tank sensor. How long did you let it run?

I forgot to ask but are you may be confusing water pump flow with incoming water. They both appear the same except at the drainpipe.
Your machine may be in the harvest part of a cycle; From the manual; Harvest: During the harvest cycle the compressor is still operating, but the water pump has stopped. Two other
components have been energized: the hot gas valve and water inlet valve. These two valves open and warm up the
freezing surface, so the cubes fall into the bin. The freeze cycle will restart when all the cubes have been harvested.By introducing the incoming water on top of the evaporator, it aids harvest and pre-chills the water.
