Not that simple. Each oven is a individual spec for the use. I know of at least 4 different fingers. There should be a chart on the front or plastic tag attached outside and another inside the control cabinet. If there is no chart outside, the internal one may not be correct if it was updated after install. In that case contact Middeby Tech support. They keep serial number records.

You should always mark fingers with location like T1 or B6 as they are removed. Also keep the individual finger parts together. That way you won’t change the cooking characteristics of the oven.
