Rational CM Plus – bake fan reversing option?

Does anyone know if you can create Cook& Bake programs with a reversing fan option… chef is complaining that two trays of bacon cooked ok but one tray was undercooked. And someone measured different temperatures in different locations (though i dont know the conditions)…
And complains that when baking cupcakes and scones similar inconsistencies ocurr.
any tech manual links ??
Note: I test ran on Convection 110’c, then Steam 120’c, then Combi 150’c without error or faults.
Also on a CM-101G on Cooldown there is only Low fan speed can this be changed… any tech manual links ??

Ok, some more info… it IS reversing, though the spinning ‘d’ digit on bottom of panel doesnt change direction (always rotating anticlockwise)…Is there a fault code for it NOT spinning one way or the other?

Their manuals are locked up behind the Service Partner Portal on Rational’s website, which I think access is reserved for those who have attended their factory training. I’ve never been.
