Southbend Convection oven

Want to confirm that you have a 360AD Range. without a number and 2 letters following it? If so , look at the oven venting in the back top. If the Gas valve is getting hot, that means there is little air flow from the bottom to remove lost heat from the oven above it. Or there is a Heat panel missing or installed improperly. My Guess is on Venting. Look down the chimney in the back for a oven glove.

Further thinking on this, I remember that the burner hood/orifice is on a elbow off the valve. And that it uses a copper tube 50mv thermocouple. It is also mounted on the front of the bottom of the range and goes thru a heat panel to the burner. There is a heat dissipater on the bottom of the oven that has to be in the right way to seal the front shield and allow the heat and exhaust to rise on the sides of the oven. Sometimes they warp from being hot and spilled liquid hitting them at high temps. Make sure it seals across the front. The oven gasses then vent at the top back center.

Also, the thermocouple may not be tight enough in the valve and the heat expansion may cause it to have resistance. Also, it’s important to have the right pilot for the gas used. The reactor hoods are different material and may not provide the proper flame for the pilot.

Is there a parts breakdown available which would show what I am looking for. Specifically looking to know exactly where heat panels are that may have been put in wrong
