Two of the burner control valves have come loose from the manifold when the knobs get bumped and they don’t stay lined up with the burner Venturi the gas escapes and catch’s fire before it gets to the burner is there a way to secure the valves so they don’t turn and get dislodged from the burner

Your main problem is operator training and error. Or perhaps replacement. If they are hitting the valves hard enough to rotate them loose from the manifold, they are hitting hard enough to bend the valve stem and cause a dangerous leak. Loctite makes a thread sealant just for that kind of problem. It’s their 5770.

The top bump rail is supposed to provide protection to the control valves. The handles are supposed to be within the guard. Look for something mounted wrong, like a reversed manifold mount. Or the wrong valves or handles. The oven door handle also is designed to protect them. You may also want to check the kitchen carts to see if there height can pass within the guards.
