You didn’t provide a model number, so I’ll just take a shot at the possible problem.

 

On Manitowocs that have that ice thickness sensor dangling down there in front of the evaporator plate…which might look something like this:

…, you might need to adjust that per the instructions behind the hinged front panel.  If that’s what you have and properly adjusting it still has the ice thickness coming up short, then I recommend replacing tit.  It’s called the ice thickness control.  They’re notorious for going awry when they’ve been there awhile.

 

Then again, considering that it must have been doing fine before and now it’s not, just replace it anyway.  I’ve had to m-a-n-y times after tinkering with the adjustment proved fruitless.
