    I have a two unit gas fryer and the right unit will drop temp significantly after frequent usage. And the left fryer’s pilot will go out randomly. Does anyone know what this could be?

    I can think of many possibilities, But without a make and model number I hesitate to name them. Different brands have different systems.

    I have never used this type of fryer before, it has a grease catcher with a filtration system underneath as well.

      Ok, is this fryer Natural or LP. I’ve never seen a mechanical gas valve thermostat before. That alone will make a wide range. And flow restrictions. But you’re going to have to start with a manometer and measure the gas pressure and manifold pressure. Then you’re going to need a good DVOM to test the pilot voltage. With all those electrical connections, I’ll bet you have some losses. That would cause intermittent pilot trips.

      As for the temp dropping, it’s probably heat saturation of the gas system. Low pressure Or the gas regulator vent tube is blocked. That’s why you will need to measure the pressure. Both line and manifold. That thermostat system will definitely cause manifold drops.

      Is it on legs or wheels. If on wheels, check the coupler and valve to be fully seated and fully open. Low gas pressure will the one pilot to go out when the second burner draws heat. And vice versa, when one is running, the other may be starving for heat. So check the supply first.

      Not a brand I’ve ever come across. Nor want to by the looks of it.
