Posted by Hashara Gomes on December 18, 2023 at 10:44 pmhey friends. i have one gas-deep fire. when we turn it on at that same time it works nicely but when oil getting heat around 300 F whole deep fire geting off including pilet as well. i did change gas valve and thermo couple but still same issu . could any one please help me with this ? [ deep fire name is vulcan]

sounds like you may have a high limit switch that could be tripping. what is the model number for the unit? if it has a digital temp display are you reading 300 degrees on the screen or a thermometer?

Yes sir I checked with thermometer .i did attach model number and higlimit part number .it 3 pin height limit . Do I need to change thermostat as well sir ?

If your thermostat temp matches your thermometer there shouldn’t need to replace the thermostat.

Do You have a manually lit pilot? If so, then you will also have a high limit safety and a pilot safety valve. We use a multimeter to test and find problems instead of just randomly replacing parts. First, I need to know if you have a thermopile or thermocouple as the power supply for the fryer. Thermopiles are made to produce 750 millivolts potential. Thermocouples make 50 millivolts. They are cheaper to make and a smaller diameter. Often have a single tube/wire that connects to the gas valve. Thermopiles will mostly have 2 wires with spade terminals attached. All though there are exceptions.
There are 2 common scenarios that happen with deep fryers displaying this symptom. The most common is low voltage to the valve. either the pilot adjustment/condition, or wiring resistance is too high and the valve drops out . This can be because the gas supply to the fryer isn’t adequate. Undersized piping, valve not fully open, or a regulator not in spec.
If you attach a digital voltmeter to the pilot generator connections set at DC Mv scale, Then light the pilot and go through the fryer heating process as you monitor the voltage. You stated you replaced the thermocouple, so before you turn the thermostat up you should see 50 mv on the meter. When you turn the thermostat on, the voltage will drop a bit and come back up to above 40mv. it should hold there for the whole firing sequence. Then rise back to 50 when the thermostat opens. If the voltage keeps creeping down as the fryer is heating, measure the gas pressure at the manifold with a manometer.
Note, this is generic information as I do not have the model of your fryer.

Your images show that you do not have a thermocouple. You have a thermopile! They are more robust and longer lasting than a thermocouple. They also make 750mv. But yours shows heat and wire damage. Get a good DVOM and check the safety system to find where the problem is. I suspect that it is the wiring connections or wires. The unit shows a considerable amount of heat roll-out.
