There are general purpose dixell XR02cx digital controllers that are packaged and sold as Weiss instruments. It would have a digital display and should have every function for a display case, I usually see them in stock at local supply houses if that's what you are looking for. Keep in mind, they are not 100% universal; there are different ones for 120v or 208v Depending on what voltage case you have.

Do you have a stationary thermometer inside on a shelf? If not, you should definitely put one inside; temp gauges on outside are not the most reliable.
Another thing to consider is, how hot is the area the freezer is in? I would say clean the condenser coil if you didn't already, it will lead to slow recovery if it is clogged or if the ambient is 85degrees or above. Last quick thing to check is, how many doors is your unit; door switches are a common issue on stand up units, won't allow the evap fans to run, open each door and push up on the switch to make sure the fans start (Do this when the box is cold)

That keeps the machine continuing to make ice after the ice falls into bin.it sounds like you are describing the ice thickness probe, it should not actually be touching the grid though; you should have a 3/16″ gap for the correct bridge. If that is what you are talking about, it does not shut off or keep the unit running, it only senses when the ice is large enough to harvest, the magnetic curtain switch will terminate harvest after ice has fallen or turn the machine off when the ice fills the bin enough to keep the curtain open.
