    I couldn’t find a schematic for the wiring for the mixer on this download.

    General doesn’t publish wiring diagrams due to many redesigns etc.  There should be one inside your machine.  Normally glued to the top cover.

     

    They are a very simple wiring. A normal on switch as the off, A normal off switch as the coil energizer, A normal closed micro as the shield safety. And a 4 pole contactor.  The red button and the micro are in series for coil power holding through one pole of the contactor. Green button powers the coil  directly when pressed only.  Then stop circuit holds it in.  Two poles of the rely power the motor.  Motor is a capacitor start, capacitor run with a centrifugal switch in the end.for starting
