    Oh yeah, I called & emailed and spoke with just about everyone, even aftermarket vendors who sometimes tie their pricing to OEM market, everyone thought maybe it was an error, but almost 2 months later it is not. I also saw the individual items, as far as the crappy cotter pins go I toss those & put hitch pin clips in, just a nice touch for my customers asa the cotter pins fall out. Ill stick with the aftermarkets until someone figures out how to get the OEMs through the tunnel from Mexico, maybe Ill start digging one.

    Yes you are correct, Chicago, would have to be after the season unfortunately as it's too dam busy here for the next several months. Spoke with Jim McCormack regarding unit, he is super helpful, and hopefully we will get this resolved next week. He had mentioned the course in Chicago and gave me the lady's name who organizes it. He also recommended replacing every hose in all units every 2 years. Appreciate the info, I always found this site a great resource for throwing issues out there and waiting for thoughts and ideas from those who have had to deal with issues such as these over their long careers, as no one could possibly have seen everything in the equipment world, even though we may feel like we have. I am the type of person who simply has to know every possible reason and or outcome for every possible scenario or I simply can't sleep at night. I have seen some crazy stuff over the years, and I find myself every week still saying “wow, I cannot believe someone did that” or “who the f designed this thing”. When I hear the director of stadium operations trying to tell me about some new state of the art piece of equipment that some salesperson showed them I find myself wanting to climb a light tower and jump off. We are presently on the Evo grill kick this season, good concept, but must maintain an almost fanatical cleaning regime, and when the inspector wanted them all tied into the central alarm system I almost cried imagining the chaos of an entire stadium emptying to the sound of fire alarms because some idiot caused a grease fire on a grill.

    Well I guess this would explain the issue, when loaded and door sealed against trolley there is obviously a significant back pressure applied to heat exchange tubes and these cracks are significant.

    Well, thanks for the info,  as stated in my original post this general gas reset error occurs during use in either steam or non-steam mode. Also, again all burners showing the specified 5.75 uA during the previously mentioned test cycle, and again, flu gas was spot on along with dynamic pressure readings.

    No, I am not a Rational tech, I run a facilities dept at a large stadium complex and am responsible for day to day operations including kitchen equipment. I do maintain a significant inventory of parts on hand for all of our equipment including the Rationals, but as you saw in my original question, am hesitant to start pulling burners. I simpky found it odd that this particular unit throws the general gas reset error when loaded and not empty as in my diagnostics run. Makes me wonder what is the difference when they have a trolley full of pans and food compared to unit being empty? I dont imagine too many “Rational” techs are loading units with pork roasts in order to run diagnostics, but I guess I could be wrong, but in my 35 plus years in this business I suppose I could have missed the service truck loaded with raw pork roasts along the way. My other thought was when a trolley full of product is loaded in unit and door is sealed against trolley, I would imagine there is a significant change in the pressure dynamics on the heat exchanger tubes, and if there were any faults in any of those tubes it would affect the burners in a significant way?

    I have a stupid question, one which I have been aching to ask for a few years now. I am responsible for several Forno gas/wood hearth ovens, how in god's name do you repair the stone deck when it becomes severely cracked? I dont know too many tiny masons that will fit inside the small opening where the pizzas go.

    Also look inside burner compartment where the electronic pilot mounts to the burners, if I had a nickel for the number of times Ive found chunks of the combustion chamber insulation sitting on top of the electrode and flame sensor causing it to short to ground thus resulting in ignition failure, I generally use the longest screwdriver in my box to poke the offending piece of insulation off of sensor and over to the side of combustion chamber. Also check the entire length of ignition cable for tiny cracks or pinholes, causing high voltage spark to short to ground, I find that quite often on the “newer” thinner orange ignition cables, use your ears and listen for arcing, or just run your fingers along it, you'll find it.

  • Also watch the amber light when unit fails, 3 light flash typically signals to a faulty temperature probe. If I had a nickel for every quirky issue with these units, and I have caught myself on more than one occasion assuming the issue due to my responsibility for literally hundreds of these units. The wet ignition module  typically rears it's **** head by unit igniting pilot and getting stuck there, not proofing to burners, and happens most often on unit not protected from floor moppers, banked units with filter system this is typically the unit without the filter tank and shield protecting module from water when cleaning floors. Pitco designed an enclosure for the module due to so many water related issues, which I find most “techs” remove and throw away, usually the large corporate service companies. A bad high limit would be fairly simple to troubleshoot and if you are not finding it tripped after the initial 5 minute heat up then its probably fine. The roll-off limit, if tripped would be fairly simple to figure out also. I have run into a significant amount of faulty solid state controllers, typically run in batches. If this is a banked set of fryers you could also try the time tested method of temporarily swapping the solid state controller from working unit.
